Pea Shoots
Pea shoots are an absolute classic among microgreens and a familiar sight as a garnish on dishes in fine restaurants. However, they are much more than just a garnish. The sweet and fresh flavor of summer peas, the juicy and crisp texture, and the highly nutritional content of a superfood make it a classic ingredient in your own kitchen as well. Pea shoots are also a favorite among the little ones in the family – with these, you can get even the kids to enjoy something green :)
Pea shoots contain abundant beta-carotene, various B-group vitamins, vitamin C, vitamin K, minerals (calcium, copper, iron, magnesium, manganese, phosphorus, potassium, zinc, selenium), phytoestrogens, various antioxidants, and a moderate amount of protein.
In general, microgreens are an extremely nutrient-rich food. They can contain up to tens of times more nutrients than their full-sized plant counterparts. It's genuine superfood that doesn't come in a powder form in a jar.
Microgreens are excellent in salads, on bread, in smoothies, or as a finishing touch to soups and other warm dishes. When used in warm dishes, add them to the dish right at the end.
Tip: Replace your salad base with microgreens for a refreshing taste and a substantial dose of nutrients!
